Sweet-Potato Wedges

Ingredients
- 3 sweet potatoes
- 1 garlic clove
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon dried thyme
- 1/8 teaspoon crushed red pepper
- 1/4 teaspoon salt
Directions
- Preheat oven to 400°.
- Peel and cut sweet potatoes into 1-inch wedges.
- Crush the garlic clove in its skin.
- On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, thyme, pepper and salt.
- Roast until soft, about 30 minutes.
