Sweet-Potato Wedges

  1. Preheat oven to 400°.
  2. Peel and cut sweet potatoes into 1-inch wedges.
  3. Crush the garlic clove in its skin.
  4. On a rimmed baking sheet, toss sweet potatoes with garlic, olive oil, thyme, pepper and salt.
  5. Roast until soft, about 30 minutes.
