Zucchini Pancakes
Ingredients
- 2-3 zucchini
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 garlic clove minced
- 1 egg
- 1/2 cup flour
Directions
- Grate zucchini.
- Put grated zucchini on paper towels to absorb excess liquid.
- Combine all ingredients, except zucchini, in a large bowl.
- Add zucchini; mix just until combined.
- Add vegetable oil to skillet at medium heat.
- Using 1/4 measuring cup, drop batter into frying pan and flatten slightly with spatula.
- Fry zucchini pancakes until browned on both sides and solid in the center.
