Favorite Muffins
Make it a point to serve muffins hot—right from the oven or split and reheated in the broiler.
Ingredients
Popular Muffins
- 1 egg
- 1 cup milk
- 1/4 cup salad oil
- 2 cups all-purpose flour
- 1/4 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
Sweet Muffins
- 1 egg
- 1/2 cup milk
- 1/4 cup salad oil
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Directions
- Heat oven to 400°. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter). Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
- Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove pan.
Note: If using self-rising flour, omit baking powder and salt.
Variations
Blueberry Muffins
Fold 1 cup fresh blueberries or 3/4 cup well-drained frozen blueberries (thawed) into batter
