Strawberry Nut Bread
Ingredients
- 20 ounces frozen strawberries
- 4 large eggs
- 6 tablespoons clarified butter
- 3/4 cup + 2 tablespoons oil
- 1 1/2 cups oat flour
- 1 cup white rice flour
- 1/4 cup tapioca starch
- 2 tablespoons potato starch
- 2 cups sugar
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup chopped walnuts
- Millet flour for pan
Directions
- Preheat oven to 350°. Butter and flour a 10-inch tube pan.
- Combine the eggs and 1/2 cup sugar in stand mixer and beat on medium high with whisk attachment for 4-5 minutes until thick and light.
- Combine flours, starches and 1 1/2 cups sugar then sift over egg mixture and fold in.
- Fold in oil and butter.
- Fold in strawberries.
- Bake for 55 minutes to 1 hour until tester comes out clean. Cool on rack.
Note: replace some of the oat flour with walnut meal.
