Strawberry Nut Bread

Directions

  1. Preheat oven to 350°. Butter and flour a 10-inch tube pan.
  2. Combine the eggs and 1/2 cup sugar in stand mixer and beat on medium high with whisk attachment for 4-5 minutes until thick and light.
  3. Combine flours, starches and 1 1/2 cups sugar then sift over egg mixture and fold in.
  4. Fold in oil and butter.
  5. Fold in strawberries.
  6. Bake for 55 minutes to 1 hour until tester comes out clean. Cool on rack.

Note: replace some of the oat flour with walnut meal.
