Oat Bran Blueberry Muffins
Ingredients
- 2 1/4 cups gluten-free oat bran
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 2 large bananas, chopped
- 1 1/4 cups fat-free milk
- 1/4 cup maple syrup
- 2 egg whites
- 1 cup fresh or frozen blueberries
Directions
- Preheat oven to 400°F. Fill muffin tins with paper lines. Combine oat bran, baking powder and cinnamon. Blend bananas, milk, maple syrup and egg whites in a blender until smooth and frothy. Pour liquid contents into oat bran mixutre. Blend until dry ingredients are moist. Stir in berries. Fill muffin wells about 2/3 full. Bake for 20 minutes or until tops are brown.
