Brazilian Cheese Buns

Ingredients
- 1 egg
- ¼ cup olive oil
- ⅔ cup milk
- 1½ cups tapioca flour
- ½ cup aged cheddar, shredded
- ½ tsp salt
Directions
- Preheat oven to 400°F and grease a 12-cup muffin tin. Blend ingredients together in a standing mixer, stopping to scrape down the sides with a spatula.
- Pour batter into greased muffin tins.
- Bake for 20 minutes until tops are browned.
