Apple Muffins
Ingredients
- 1 egg
- 1 cup milk
- ¼ cup softened butter
- 1 cup grated apple
- ¼ cup sugar
- 3/4 cup brown rice flour
- 1/2 cup sorghum flour
- 1/4 almond meal
- 2 tablespoons oat flour
- 1/4 cup tapioca starch
- 2 tablespoons potato starch
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon xanthan gum
- 3 teaspoons baking powder
- 1/4 cup chopped nuts
Topping
- ⅓ cup brown sugar (packed)
- ⅓ cup broken nuts
- ½ teaspoon cinnamon
Directions
- Heat oven to 400°. Grease bottoms of 12 medium muffin cups (2¾ inches in diameter). Beat egg; stir in milk and butter. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
- Fill muffin cups ⅔ full. Sprinkle with topping. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.
